Was it a RAM dealer? Not sure of the laws in KY but in many places it is against the law to sell emissions modified vehicles.
If it is deleted and doesn't have an engine tune you will have nothing but engine code after engine code.
You really need to find out if it has been tuned to accommodate the delete. If not, you are in trouble. If you got it from a dealer they should not have been allowed to sell it w/o functioning emissions.
Here in the U.S. and Canada there are really only a couple tunes that are trusted. It seems these trucks are pretty complicated and pose challenges for someone w/o a lot of resources to do it properly. Check around here and see if you can glean some info on tunes. There may be some that ship...
Most change oil between 5 and 10 K miles depending on your use, Good to do a fuel filter at the same time. A tank of DEF fluid can last 1000's of miles on a tankful. I fill mine up every 7500 miles (same as my oil change) Congrats on the truck and show some pics!
If one dealer now has 3 trucks with the same problem I think there may be a problem with the workmanship. I have heard of very few HPFP replacement problems that weren't a result of improper installation.
If you were able to take your tune out before you took it to the dealer and then reinstall it after you got the truck back then your EGR is turned off. If the dealer flashed over your tune its is gone 4ever!
