If you use the shift buttons and shift up so the gear shows on the dash you can observe what gear it's in. Y could also force a downshift to 7th to see if it persists, it may be the torque converter unlocking and locking, or the AC compressor cycling.
Invest in the EDGE CTS MONITOR, it will show you soot loading, regen status and a bunch of other stuff, I would
also suggest ALFAOBD with a good obd dongle, ALFA OBD requires windows or android operating system and will not work on an APPLE product. I use an unused kindle fire 8HD, It works...

Basically you need the EGR block off and the TURBO DOWN PIPE, I got both from EBAY, or you can try Mrtuning out of Canada, in fact Mr has very excellent tunes and trans mission tuning.

I was getting worried on mine, no codes just the 100% message on my insight, Ithink it took a couple of weeks until we headed out of town for a trip to Phoenix, it finally dropped into a regen and has been fine since.
Have you tried driving it until it starts a regen? You mentioned that you saw and verified 600* CELSIUS during the stationary regen, that equates to 1,112* FARENHEIT which is about where mine runs during regen, 1,052 to about 1,210 on average but settling around 1,112. Maybe the DPF is failing...
