'21 Limited mileage down...new to me

howdy all ! I bought a '21 Limited eco w/73K this late summer and was amazed at the mileage (lie-o-meter showed 30-32). I'm new to diesel ownership....and I'm puzzled at my last few fill ups ( this is not an everyday vehicle) mileage only in mid 20's (hand calculated)with no change in driving style. I know how to watch and drive for good mileage ...I've exceeded the EPA ratings on every one of my other cars....so I"m stunned that I can't get the mileage I got in September now. I've been told there is a different mixture for winter....so I know that....maybe 8% hit (lower)? I just did a trip from Colorado to Texas and couldn't break 27mpg.... REALLY trying to....aka keeping the ecometer in the 30+ area and not going over 73mph (2,100ish rpm's). My tire pressures art 2 lbs higher ( I set them there) and air filter is fairly clean.

What could be the culprit here? Is there other areas of maintenance that are needed at this mileage? The previous owner got it serviced regularly and had all recalls performed. Fuel filter was changed in last 10k miles.....what else am I missing? Also, I"ve never experienced a 're-gen' that I know of...is that indicative of anything? I have had to put two containers of def fluid over 3,000 ish miles though ( towed our camper one time in the summer and that ate through the def fluid)

I purchased a 2020 ram 1500 ecodiesel with 31,900 miles. It now has 36,200.
I was getting 24-26 MPG in September now I'm only getting 19-21 MPG because of the cold weather and short trips.
I add diesel additives to my fuel every fill up.
