Posts refer to seeing the percentage of filter blockage. Or knowing when the engine is performing a regen. How do you know when your engine is doing a regen and how much soot is clogging your system?

You can get engine monitors that do that, do a search for a list of recommended ones. AlphaOBD is a good all around one.. or even ones from Amazon.
