For a delete you'll be missing some or all the following parts:
- EGR Cooler in Engine bay
- DPF Filter Exhaust
- SCR Exhaust
- Not having to use any DEF
- Straight pipe installed to bridge the gutted DPF/SCR
As for tune, no way to tell who's program is in the ECU, other than to perhaps...
More likely is a voltage issue, check your battery health.
Also low fluid can cause the transmission to not match the selected value (PRND etc). Fluid level rises as the tranny heats up.

There is a throttle bypass valve that opens when you charge air (rev) then slam the throttle plate shut. The air has to go somewhere or the turbo pump will be hit. Creates a pipe hammer effect. So it's that system that is chuffing.
I blew my bypass doing that in a Volvo R - full throttle 5K...
